Brown rice pudding

3 cups pre-cooked brown rice
1/2 can lite coconut milk
1/2 cup water
4 tbsp honey
1 tsp vanilla extract
1/4 cup raisins
a pinch of nutmeg
1/2 tsp cinnamon

Place all ingredients in a pan on top of the stove, cook at low heat for 20 minutes. Place in individual serving bowls and refrigerate until cool. May serve with a sprinkling of cinnamon on top.
